Asian Tomato sauce by Chef Raghu

50gms Butter
50gms Chopped onion
50gms Chopped carrot
30gms Flour
30ml Tomato puree
2 Fresh tomatoes
200ml Chicken stock
30gms Sugar
20gms Salt
20gms Clove
30gms Parsley
30gms Celery
20gms Bay leaf
20gms Peppercorns
20gms Thyme

Melt butter in a saucepan, add onion and carrot sauté till it turns into brown colour add flour and mix it.add tomato puree fresh tomatoes, white stock and remaning ingredients. Bring to boil and let cook slowly for a hour. Rub sauce through a strainer refrigerate any you do not use at once.
