Dhai ki Baingan by Chef Raghu

100gms Sliced Brinjal (Baingan)
100ml Beaten curd
Salt to taste
20gms Cardamon powder
30gms Fresh coriander
20gms Garam masala
30gms Besan
20gms whole red chilli
2sprig Curry leaves
50ml Ghee

Fry baigan, Mix besan with curd and keep aside.In a pan heat ghee add curry leaves and besan flour mixture,allow it to simmer for 15 minutes,add brinjal and remaining ingredients and cook for 5 minutes, garnish with chopped coriander
