30gms Chopped mint
40ml Olive oil
30gms Spring onion
20gms Sugar
2 Grated zest lemon
10ml Lemon juice
20gms Black pepper
Salt to taste

Mix mint,oil,spring onions, sugar and lemon zest, add lemon juice to taste, season with salt and pepper
