Berenjena salad by Chef Raghu

(Brinjal salad)

300gms Blanched and diced berenjena (brinjal)
50gms Chopped tomato
50gms Chopped onion
30ml Tomato sauce
30ml Olive oil
20gms Chopped green chilly
10gms Fresh oregano
10ml Lime juice
Salt to taste
20gms Crushed pepper powder

In a large bowl mix Tomato, onion, olive oil, salt, pepper, tomato sauce, lime juice and brinjal serve it in berenjena shell or in platter with a sprig of parsley.
